The filter paper under discussion utilizes a "Two-Side Crepe" pattern, with a carefully reduced height of the crepe. Compared to the conventional "One-Side Crepe," this particular design offers a slightly larger surface area. Consequently, the adhesion area for fine coffee powder is also expanded, allowing for enhanced interaction between the water and coffee particles.

 

During the initial stages of the brewing process, when the adhesion of fine coffee powder is relatively low, water flows smoothly through the filter paper. This unimpeded flow enables efficient extraction and dissolution of coffee solubles, promoting the development of desirable flavours and aromas. However, as the brewing progresses into the latter half, the adhesion of coffee particles gradually increases.

 

The heightened adhesion in the latter stages of brewing serves as a natural mechanism to regulate the water flow. As the fine coffee powder adheres more strongly to the filter paper, it introduces resistance to the water flow, applying a controlled braking effect.
